Did you know that there are 6 types of sushi according to Hiroko Shimbo (who is a very important chef in Japanese cuisine)?

Inarizushi (named after Inari - Shinto god) - deep-fried tofu, usually no fish with soy, dashi, sugar, and mirin to marinade.
Makizushi (rolled sushi) - is probably one of the most common things that come to mind when people think of "sushi". Ingredients and rice rolled in nori seaweed.
Narezushi (aged sushi) - the traditional (initial) sushi method which ferments the fish and removes the rice before consumption.
Nigirzushi - hand-pressed rice served with a variety of delicious ingredients.
Oshizushi (pressed/boxed sushi) - Layered toppings, cut into triangles or small squares
Chirashizushi (scattered sushi) - Think "poke bowl" but the kind you build, this is composed of a bowl of rice with different ingredients.
